carrot soup


Would you like something other than tomato or vegetable soup? Then try this slightly spicy sweet carrot soup of Nutritious and Fast ! Very quickly on the table, easy to advance and very nutritious, because it is full of vegetables. Ideal if you are in a bit of a hurry, or a lazy sunday.

  • 1 liter of water
  • 1 onion
  • 1 red pepper
  • 15 gr. ginger
  • 1 tbsp coconut oil
  • 375 gr. carrot
  • 1 apple
  • 1 tbsp broth powder
  • 1 tl. tikka massala
  • half lemon
  • 100 gr. (baby) spinach
  • 1 tbsp extra virgin olive oil
  • pepper and sea salt

Make & Shake

1.Heat 1 liter of water and add the broth powder.

2.Chop the onion and finely chop the red pepper.

3.Peel the ginger and cut it fine.

4.Heat the coconut oil in a pan and fry the onion, pepper and ginger.

5.Peel the apple and cut into cubes and then cut the roots into slices.

6.Add the carrot and apple into the pan and fry for 5 minutes. Now add the bouillon powder, the tikka massala, the juice of half a lemon and the hot water and boil the soup for 10 minutes on low heat.

7.Meanwhile, let the spinach shrink in a pan and put the spinach in a bowl.

8.Add the olive oil, lemon juice and pepper and salt and leave to soak.

9.Purée the soup with a hand blender and serve with the fried spinach.
